Cashew Chicken Lettuce Wraps

I've made this recipe for cashew chicken lettuce wraps twice in the last few weeks. They are so incredibly good and so easy to make. I'm a huge fan of the lettuce wraps from PF Chang's and I was happy to find a really good recipe for them that I can make at home.
I followed the recipe exactly, except that I used a soy sauce alternative, since I try to avoid as much soy as possible.
Bonus: they're low carb!
