For quite a few years now I've been ordering meat in bulk via a company called <a href="https://zayconfresh.com/refer/zf233417" target="_blank">Zaycon</a>.</div>

I can not even begin to tell you how much money I've saved our family buy buying grassfed ground beef (yes, GRASS FED!) and farm fresh chicken from them. Their website is easy to navigate and they always give me cash back with each purchase from my previous order! So, for instance I placed an order for their grass fed ground beef (which is SO SO SO yummy, by the way) recently and I ended up paying just over $2/lb! I've also bought their boneless, skinless chicken breasts before and been very happy. I hope to order some this Fall (the next "event" offered in our area). </div>

This is how it works: you can see what "events" they have upcoming in a town near you. Even the smallish size city we live in constantly has deliveries available.<br />

You pay online in advance. They even email you AND text you reminders so you don't forget.</div>

They list a drop off site (ours is usually in a church parking lot) and you just pull your car up to the their clearly marked delivery truck and you tell the worker your name and they load your boxes into your car for you and you're on your way. SO SIMPLE!<br />

I am always buying closeout deals, mark down produce, meat, dairy products, and bread. Since they already have an excellent selection of organic and natural products that makes manager markdown deals all the better...AND...Kroger lets you pair coupons (both regular and digital!) on clearance items. Not long ago I scored a ton of organic maple syrups for $1.99 each on manager markdown (as well as those super cute baskets in the photo above!). </div>

Recently while visiting my parent's house my dad brought home loads of the biggest blackberries I've ever seen! They were local and SO delicious. </div>

Since we had so many I decided to try making some blackberry jam. You could use this recipe to make any berry jam, but it was particularly good with the blackberries. It is a good low sugar recipe.<br />
I used organic cane sugar, but you could use honey for really tasty results. </div>

This was just about the easiest and fastest recipe I've ever canned.</div>

Also, if I can just say: I went to the local Dollar General and I'd no idea they had canning stuff. Anyways, they had these ADORABLE mason jars in various sizes. 6 cups of berries</div>

1 box of low sugar pectin (all natural <a href="http://amzn.to/2s6VEcv" target="_blank">Pomonas Pectin here</a>)</div>

2 1/2 cups organic cane sugar (divided)</div>
<div style="text-align: center;">
1 tsp. vanilla extract </div>
<div style="text-align: center;">

<div style="text-align: center;">
In a small bowl mix pectin with 1/2 cup of sugar. Set aside.<br />
<i>*If using Pomonas brand pectin then follow box instructions*</i></div>

In a stock pot mash berries with a potato masher over medium heat.<br />
Bring the mixture to a rolling boil and add the pectin mixture.<br />
Boil at a rolling boil for 2 minutes.<br />
Add remaining 2 cups of sugar.<br />
Boil 1 minute.<br />
Remove from heat and add in 1 tsp vanilla extract.<br />
<br />
Ladle into hot sterile jars and process in a hot water bath for 10 minutes<br />
OR<br />
Keep fresh in the fridge for a week, or so.<br />
IF it lasts that long!<br />

The last few years Caleb and I have stopped renting our basement apartment and have been slowly converting it into a guest suite and family room area.</div>

We recently finished building a faux fireplace with built in bookcases (I need to post about that soon!). It came out beautifully. Caleb did a fantastic job on the whole unit.</div>

So long story short last month we had visitors who discovered that the guest room bathroom had water leaking underneath the flooring. It must have been leaking for some time as there was extensive water damage all over the basement when we ripped up all the flooring.</div>

It is a drain issue and insurance refuses to cover it. The water damaged our laminate flooring (it's total trash), the bathroom flooring, shower unit, baseboards, etc etc etc.</div>

It is a MESS down there. We decided to go ahead and gut the entire bathroom. It needed it anyways as it is old (1950's) and not very well put together to begin with.</div>

One good thing about removing the plastic surround (besides removing it's hideous tan self) is that we can gain almost a foot in each direction in the shower. Before the shower was a SUPER small tight space and the ceiling was so low. </div>

So we can do most reno stuff ourselves, but fixing the drain and replumbing everything is something we weren't comfortable with undertaking and so we called the plumber for all that part. </div>

Caleb has been working on building a new shower stall that will be tiled with white subway tiles (!) and even have a light in it (it was super dark before). We've added recessed lights in the ceiling and rewired all electrical. New drywall has been hung and primed. We got rid of the old tiled drop ceiling and put up a nice smooth ceiling (yay!). </div>

And this week's project, so far has been to tile and grout the new bathroom floor. I used the same faux stone tiles from Lowe's (they look and feel just like real stone) that I used on the guest suite fireplace surround. I'm so happy with how they turned out! </div>

Tonight will be putting insulation and tile backerboard stuff up in preparation for tiling the walls soon.</div>

I wanted a cute idea for labeling a bunch of jars of various jams I've been canning lately.</div>

So I came up with this perfect rainy day craft that the kids loved working on while I canned savory tomato jam (which is SO SO SO good, by the way!).</div>

I laid out a pile of white coffee filters and the kids Crayola washable watercolors that they love so much. I told them to just go to town with painting rainbow colors all over them. Even I enjoyed getting to paint some. The littles were so thrilled with how they came out.</div>

Growing up one of my favorite breads from our local bakery was their whole wheat honey oat bread. I think it may have had various seeds in it too (which would be great in this recipe!).<br />I remember how good it tasted fresh and warm out of their ovens and slathered in butter.<br />Oh! And the smell!!! Amazing!<br /><br />So I played around with a few recipes and made modifications and came up with this "whole wheat" honey oat bread. I'm sure you could successfully use white rice flour, but I chose to try using the brown rice flour since it tends to impart a heavier nuttier flavor that I was looking for. <br /> Like I said, I bet seeds would be a great addition just stirred into the batter.<br />Oh, and did I mention it only has one rise? So you can whip this up rather quickly for yeast bread.<br /><br />This bread came out to be SUCH a good imitation. My kids and husband inhaled it and said you would never know it was gluten free. That made me happy!<br />I've got a great bread recipe for a gluten free sourdough bread. It is equally easy to make and very good, but it tends to only be good toasted the following day, as it gets a little more crummy.<br /><br />However, this bread was just as good the following day!<br />I'm curious to try freezing a loaf and see how it thaws.<br />My kids loved it both warm with butter and toasted up to make peanut butter toast (with some chocolate chips sprinkled on top, of course!).</div>

Last Fall I threw a baby shower for a sweet friend who was expecting her first baby girl.<br />All us church ladies had a grand time celebrating, munching yummy treats, drinking coffee, swapping birth stories, giving advice, and watching our friend open all her gifts. All I did for the layer cake was to use my favorite gluten free vanilla cake </div>

mix and frost the cake in a delicious homemade strawberry</div>

buttercream frosting (no food dye was used!). Then I sprinkled white edible pearly beads. I used more of the paper butterflies that I had cut out to adorn the top of the cake.<br />Simple and so pretty!</div>

Dust jackets take a total beating around here.<br />
Back in my single years I made sure to cover any book, new or old with a clear protective dust jacket cover. So I ordered some recently for the children's books that have dust jackets.<br />

I ordered from the same brand I use to order from years ago called <a href="http://amzn.to/2rKiVFm" target="_blank">Brodart.</a> I'm not sure if you can order on their website. I have always ordered via Ebay or <a href="http://amzn.to/2rKiVFm" target="_blank">Amazon.</a><br />
I've used them for over 10 years now and they have held up well and preserved my books beautifully.<br />

It is a fast and easy way to ensure books are better preserved and will make it to see the light of another day and hopefully, another generation.<br />

Just pull back the clear plastic side from the white paper side and insert the dust jacket.</div>

I highly recommend this <a href="http://amzn.to/2sjPKpV" target="_blank">Psalm 23 book by Richard Watson.</a> Beautiful illustrations with all verses straight from the Scriptures. It was very helpful with Tate learning to memorizing the 23rd Psalm quickly. I think they also offer it in a small board book.</div>

<br />So I recently started thinking it might be fun to start blogging again.<br />I miss it. Then when I went back and looked I realized it has been over 3 years since I've posted anything.<br /><br />Life has really happened a lot around here.<br />In a nutshell since my last post in 2014:<br />We suffered a miscarriage.<br />Got pregnant with my daughter Anabelle.<br />Had a really rough pregnancy.<br />My Ulcerative Colitis decided to flare badly (I'm right at the 3 year mark of still flaring).<br />Miss Anabelle joined us in November of 2014.<br />Tate will soon turn 5 (!) and I will start homeschooling him this Fall.<br />We've had marriages, births, deaths, sicknesses, etc in our extended family.<br />So it's been a crazy few years, but God has been so good to us.<br /><br />I'm super excited to do some posts on some of the home renovation projects we've been working on!<br />Caleb's diy skills improve all the time and we really enjoy working on projects together. </div>

1 can of full fat organic coconut milk</div>

1/2 cup of raw honey<br />
1/2 tsp sea salt</div>

2 drops (NOT droppers!) of liquid stevia (<a href="http://www.amazon.com/gp/product/B0019LTH3U/ref=as_li_tf_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=B0019LTH3U&linkCode=as2&tag=odaat025-20">this</a> is my favorite brand)</div>

1 1/4 tsp cinnamon</div>

1/2 tsp ground ginger<br />
1/4 tsp ground nutmeg<br />
1/8 tsp ground cloves<br />
1 tsp organic vanilla<br />

Preheat oven to 350*.<br />
Bake pie shell for 5-7 minutes. Remove from oven and cool slightly.<br />
Combine all in a large bowl with a hand mixer (or use your stand mixer).<br />
Pour into cooled pie shell and bake 45-60 minutes (depending on your oven).<br />
When pie filling seems set in the middle remove the pie from the oven and cool completely on a cooling rack. Serve at room temperature or our favorite: chilled!<br />

My dad is really good at tiling and he came today to teach Caleb how to install white subway tiles for our kitchen back splash. I've waited 3 years for this day and I'm so excited! I sold some stuff a few months ago on Craigslist and was able to afford to buy the tile and other things for their installation. When we moved in there was this old (1954) paneling for the <span class="GINGER_SOFTWARE_mark" ginger_software_uiphraseguid="9c1eac10-92b4-4fc2-a23f-10f2e188b2ca" id="ff2a1e58-0a91-4861-b280-938932ed5040">backsplash</span>. It was too country looking for my style. We bought an inexpensive white subway tile from Lowe's to replace it and we're using 1/8th inch spacers in between the tiles, and "bright white" grout will go on top in a few days. </div>

I love the raw milk we buy from a local farm and sometimes I want to separate the cream from the milk. I get SO much cream from a gallon of raw milk! Little Man is eating like such a "big boy" now. He insists on feeding himself, and he takes the task very seriously! Well it's not quite a table runner, I guess, BUT it's not a table cloth per se either.<br />I found this single curtain panel last week and Goodwill for $2. It's in great condition and I really like the pattern at the bottom of the panel.</div>

I decided to cut off the upper length of linen colored fabric and hem it to match the bottom hem of the curtain panel. Both the opposite sides of the curtain were already hemmed<span class="GINGER_SOFTWARE_mark" ginger_software_uiphraseguid="5cf80b5e-83aa-47e1-bea5-08c1dcc54c8e" id="02848b4d-8351-40ed-be81-641963399dd2">...</span>so I only had to hem and stitch down one side.</div>

I was blessed in finding a great deal on a new-to-me vintage sofa. A few weeks ago Caleb and Tate and I were out thrifting around Lynchburg and we popped into the DAV Thrift Store and came across this nice long sofa. I'd say it's probably 1950's - 1960's. It is in immaculate condition. It barely looks like anyone ever sat on it! It has a pretty diamond back tufting pattern on the back. It has a nice low back too, which was something I was wanting in a sofa.<br /><br />The store wanted $100 for it and when we went to pay it rang up at $50! Apparently they were having a half off furniture sale that day. I just love it when that happens :)<br /><br />I still desperately need a rug in the living room, but so far I've not found anything that I like and that's in my budget. And...<span class="GINGER_SOFTWARE_mark" ginger_software_uiphraseguid="57262c87-ff77-43eb-9f81-3434afb6a9bc" id="114eed6e-bdd8-49b5-b0f0-ab007bc5e3f7">.</span>please ignore the mess on the mantle and bookcases.<br /><br />I also got those 4 matching gold pillows at Goodwill for only $3 each. They are in great condition. </div>
